ESHIKOTO is a brand established in 2020 by Nizaemon Ishidaya, owner of Kokuryu Sake Brewery, which has continued to produce Japanese sake in Fukui.
The mission of ESHIKOTO is to explore the new possibilities of sake, which are evolving through inheriting tradition and innovation. ESHIKOTO's sake brewing, a fusion of old and new ideas, breathes new life into tradition through tastes that never existed before.
Our long history and inherited tradition will lead to the next generation, not by looking back, but by carving out the future. This is why ESHIKOTO was born in a region known for its spring water.

Ishidaya ESHIKOTO is a store built within the ESHIKOTO facility where guests can enjoy purchasing and tasting special, limited sake from the ESHIKOTO brand. When you open the door, a striking Echizen tansu (a traditional chest) welcomes you, and the counter, polished by a plasterer, stretches out to the back and reflects a faint light. There's a sake display stand at the counter, where hand-woven cotton sake bags utilized to squeeze out sake have been reused.
A deep black Echizen washi paper is on the wall. Shakudani stones are laid out like ajiro wickerwork on the floor. A couch and table made of hewn Miyama cedar are across the counter, and behind it is a partitioned room where ESHIKOTO AWA, an aged bubbly sake, lies. We sincerely hope you can feel the profound and deep flow of time, born from Fukui's history, culture, nature, and traditional sake brewing that Ishidaya has cultivated on this land for 200 years.
